Khoa Mattar
(Dried Fresh Whole Milk and Peas Curry)

Ingredients:

3 Oz. Oil
salt to taste
6 Oz. Granulated Khoa (or Ricotta Cheese)
1 tsp. red pepper
12 Oz. frozen or shelled peas
2 tsp. ground coriander seeds
8 oz. tomato (peeled and finely chopped)
1 tsp. garam masala
2 tsp. turmeric powder
1 tabs finely chopped coriander leaves
1 tsp. shredded ginger
Fresh cream for garnishing

Method:

Add Khoa and cook for about 4-5 minutes (till golden brown in color).
Add red pepper, turmeric, salt, ground coriander seeds.
Stir a little.
Then add peas and cook till little tender.(about 4-5 minutes so that most of the liquid gets dried)
Lastly add chopped and peeled tomatoes and shredded ginger.
Keep the pan in a slow oven (250 F) for 20 minutes.
Sprinkle chopped fresh coriander leaves or parsley and garam masala before serving.
Finally garnish with cream. (optional)

This goes well with naan, pullao or steamed rice.
