Banana Cake
Ingredients:
1 1/2 cups flour
2 eggs
2/3 cup fruit sweetener
1/2 cup margarine
2 ripe mashed banana's
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. baking powder
1/2 cup chopped nuts
2 tsp vanilla
1/4 cup sour cream or ricotta cheese
1/2 cup shredded coconut (optional)
Method:
 | Cream margarine & fruit sweetener. Beat in eggs, one at a time. |
 | Blend in banana's, vanilla & sour cream. |
 | Separately, combine dry ingredients and add to creamed mixture and then add nuts.

 | Pour into 9" X 9" cake pan which has been sprayed with non stick
coating. |
 | Bake at 350 degrees (f) for 20-25 minutes. (or when cake springs back when
lightly touched) |
